This is Some Random Bull...

I have been so busy these last few weeks and not just with the usual school and work B.S., but with an actual social life. Man, I forgot how much energy it takes to having a social life I'm not sure I like it.

I don't like decorating for the holidays I always find a waste of time. Even when I still celebrated Christmas I never put up a tree.

Only 9 more classes until I get my Bachelor's degree I can't wait. I wish I could quit working and go to school full-time, so I can be done faster.

I have been thinking maybe I should date in 2008...then again maybe not.

The only thing about the holiday season I love is I get to hang out with my extended family and eat great food.

I think I ate too much great food so far this season..sigh

I have to confess I am a T.V addict although this year I have managed to narrow down my T.V. watching my favorite shows this fall were: Heroes, Journey Man, Biggest Loser and Grey's Anatomy.

I have never watched the Keyshia Cole show. I couldn't point that girl out in a line up, but apparently her show is off da chain.

My 30th birthday is next week I don't know whether to laugh or cry.

I am taking the whole first week of January off of work as a Birthday present to my self.

2008 will be a great year.

Chinese Hay Stacks

I am honestly embarrassed to say how easy these cookies are to make. If you are NOT a baker or are short on time and want a quick tasty and different treat to bring to a party these are it. My grandmother has been making these for YEARS and they are my favorite cookies. I am not sure where she got the recipe from, but I can honestly say I have never seen them anywhere else.

Ingredients:
Butterscotch chips
Chow Mien (sp?) noodles
Peanuts (optional)
Wax paper or plastic wrap

Directions:
Cover a flat surface such as a table with the wax paper or plastic wrap Melt butterscotch chips in a pot or microwave in a bowl. If using a pot transfer butterscotch into a bowl and stir in the noodles and peanuts until the butterscotch is spread throughout. Take a tablespoon and scoop out a portion of the concoction in to little balls on too the wax paper or plastic wrap let sit for about an hour to dry.

***note: I used about 2 bags of butterscotch chips to about 1 and1/2 of noodles. That made approx. 4-5 dozen. Oh and you have to do it pretty fast because the butterscotch will start to harden.

9 years ago today...

I learned what it meant to love someone. I mean really love somebody with my whole heart and soul and only wanting good things for them in life. I learned what it means to want to protect someone from harm and to put someone else's well-being before my own.

9 years ago today I was able to start a journey that forever changed the person I was. At that point forward I started the hardest job anyone can ever embark on. My greatest accomplishment and most important job that I will ever have.

9 years ago today I became a mother.

E you are more precious to me then any diamond. You are worth twice your weight in gold. You are the best son a mother can ever have and you make me proud everyday to be your mom. I love you with all of my heart and I always will.

How about that...

You Go For Brains!

You want a guy with a big... brain.

And of course it would be nice if he were a total hottie, but you're not counting on it.

What's on the inside is what counts for you. (Besides, you can always change the outside later!)

I'm Not Dead...

Things have been pretty busy the last couple of weeks and to be honest I did deep into a bit of a depressive period right after Thanksgiving. I am back now and moving right along. I can't blog too much right now because I am at the j-o-b, but I wanted to just drop a line. I am having technical difficulties at the house right now thanks to my favorite cable company Com.cast. Hopefully I can get that rectified really soon and I can post about all the things I have been up to.
